30-Minute One-Pot Meals and One Pot April (Final Giveaway!)

April has flown by and we’ve been so happy to have had all of you participating in One Pot April! If you are just joining us, please know that the challenge recipes will be available after the challenge ends and the Facebook Group will continue. You can join the challenge any time!

We’ve fallen in love with how easy and time-saving these meals are and we hope that we have equipped you with resources to continue preparing one-pan meals for your family. 

I’ve tested all 20 of the recipes from the One Pot April challenge. Each batch of recipes produced a new favorite for me. Some of those favorites include: Sunday Beef Stew,  One Pot Wonder Thai Style Peanut Pasta, Pork Tamale Pie, and Mediterranean Chicken Pesto Pizza. These are just a few of my favorites and all of the One Pot April recipes will show up in my meal plans in the future. This challenge has some truly spectacular offerings and we hope you have enjoyed them as much as we have!

30-Minute One-Pot Meals

30-minute One-Pot MealsFor our final week of the challenge, we partnered with the book 30-Minute One-Pot Meals. One of my favorites is from this cookbook: Mediterranean Chicken Pesto Pizza. Not only was it quick and delicious, but this pizza had a great freshness to it. It’s perfect for the warmer days of Spring! (I’ve actually made this recipe 3 times this month — that’s how much my pizza loving friends and family enjoyed it!)

One of my favorite parts of the one pot meal phenomenon is the vast variety that you can find with these recipes and 30-Minute One Pot Meals is no different.  All of the recipes are done in half an hour, and are made in one baking pan, saucepan, casserole dish, bowl, dutch oven, or wok. Each one is unique, but uses the amazing technique of cooking in one dish  to save you time and energy. You’ll also wow your family with these recipes — they’ll think you slaved for hours over some of these dishes. (hello 30-minute meals!)

One lucky winner received 30-Minute One-Pot Meals during our Week 2 giveaway and I wish that I could put this on each and every challengers shelf.  In fact, I think that every book from our challenge is amazing!     • Hi! All of these recipes can be found in your Plan to Eat account. My best recomendation is to plan the Menu’s we have created for this challenge. This will allow you to have a new recipe each day for a month. Menu’s are located in your Planner>Menu’s>Your Friends Menu’s>One Pot April!
