Used less chili powder, 1+ T. 2 cans beans, Mexican cheese, dried buttermilk. Drained some fat off cooked pork. The batter didn't quite spread over everything. We don't like much spice.

It was good, but spicy!! Next time i'll reduce the spice so the kids can eat it. I used ground beef instead and it was good.

Somehow I forgot to add the cheese, so we added it after it came out of the oven - but it was super yummy! I also subbed pinto beans because I prefer them. I didn't adjust the chili powder at all, I didn't think it was very spicy, honestly, I could almost sub half chorizo next time to amp up the heat, so not sure why some thought it was too spicy! But all in all, a hit at home and it has such a nice presentation. Yum.

Use a corn muffin mix instead of flour, baking powder and soda and cornmeal.

12/11/20 Made for lunch. Not too spicy at all, but we increase filling; thought the crust overpowered just a smidge. Great flavors!

I used oat milk with lemon juice instead of buttermilk and it came out great!
