The recipe brings together italian sausage, lentils, kale, red wine vinegar (you don’t want to leave that out!) and a few other ingredients to make a light and comforting bowl of soup that is perfect for cold winter days. This recipe was a hit at our house and I’ve made it several times since we started planning for this challenge. It’s just as delicious when reheated, so make a little extra and have leftovers for lunches thru your week!
I paired this recipe with a loaf of sourdough bread and grapes!
