Curry Cauliflower Quinoa Stew

1 large onion chopped
2-3 tbsp curry powder
4 cups cauliflower chopped into bite-size florets
1 (796mL) can diced tomatoes or whole, do not drain
34 cup quinoa
1 can chickpeas
1 can chopped tomatoes
1 can coconut milk
2 cups water
12 cup chopped fresh parsley
Optional: 1 tsp dried chili flakes
Sea salt and pepper to taste
