1 teaspoon salt
4 teaspoon baking powder
2 eggs
14 cup Olive Oil
2-3 cup Milk

Very good. I didn't read the recipe through and dumped all 3 cups of milk in. The were nice and light. Good flavor.

In a separate bowl beat Eggs smooth and then drizzle in Oil and whisk until thoroughly combined, which will make a smooth batter. Whisk in Milk.

Add the wet ingredients to the dry ingredients and blend together with a spatula or large spoon (vs. whisk) using as few strokes as possible. Mix until large lumps are gone but there are still some small lumps.
Small lumps go away in a few minutes as the batter sits. Overmixing makes the texture of the pancakes tougher and heavier.
