Ingredients

1 tsp cold-pressed coconut oil
12 white onion finely chopped
4 stalks celery chopped
2 cloves garlic minced + let sit for 15 min before adding to pot
12 head cauliflower chopped (or bag of riced caulie)
4 potatoes chopped
2 carrots sliced as discs
1 can chickpeas
2 tsp fresh oregano chopped
1-2 tsp fine ground sea salt to taste
1 tsp or more fresh black pepper to taste
5 cups vegetable broth (I like low sodium Imagine brand, but homemade is best)
