2 sweet potatoes CUBED, not too small
10 oz. pineapple fresh or frozen
12 bell pepper red, orange, or yellow
12 cup onion sliced thin
1 Tbsp sunflower oil OR 1/4 cup broth
ground cumin
2 limes juice only
Salt and pepper to taste
2 cups black beans cooked/canned
salsa for serving
guacamole for serving

Prep Notes

1 day before: Cook black beans from dried if desired. Pre-cut veggies and fruit if needed.
