Strawberry Cake Recipe

I have a nice seasonal treat for you all this month! Strawberry cake!

We love going to pick strawberries each spring. Thankfully, we were still able to get out and do so this year, even if it was a little different than normal. We had plenty of room to spread out in the field and spend the morning picking. Other than just eating as many strawberries as possible, I have two things I like to make with our strawberry haul… strawberry jelly and strawberry cake!

This cake recipe is from my grandmother, and we all know that family recipes are the absolute best. There is just something extra sweet about knowing the history and love behind the flavors. This cake is so easy to make and is truly delicious. It gets rave reviews each time I make it!

To get started, go ahead and prepare your pans by greasing, lining with parchment, and flouring. For more how-to on this, go back and check out my post about cake baking tips and tricks

Next, prepare the strawberries by washing, cutting off the stems, and then pureeing in the blender. If you don’t have a blender, try using a potato masher or even a fork to mash the berries. We need one cup of pureed strawberries for the cake and half of a cup for the icing, so go ahead and prep for both now to save time (and dishes!) later. You can store the half cup of berries for the icing in the fridge until needed.

In a large mixing bowl, whisk together a vanilla box cake mix and a package of strawberry jello.

Next, separate the eggs and add the egg yolks, oil, milk, and pureed strawberries to the dry ingredients and stir until the batter comes together.

In a separate mixing bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cake batter. Start by mixing in a small amount of the egg whites. This will help loosen up the batter. Then add the rest of the whites to the bowl and fold together by slowly and repeatedly moving your spatula around the edge of the bowl and then slicing through the middle.

Pour the batter into your prepared pans and bake at 350 degrees for the indicated bake time on your box mix.

For the most delicious strawberry buttercream, you only need three ingredients: pureed strawberries, powdered sugar, & butter. In a large mixing bowl, beat the softened butter until smooth and then alternate mixing in powdered sugar and strawberries. This icing is delicious and I love the simplicity of the ingredients. The texture is slightly stickier than my normal vanilla buttercream due to the strawberries. Depending on the finished look of the cake that you desire, you can use this strictly as a filling or to ice the whole cake. For the cakes you see in this post, I used this icing as the filling and vanilla buttercream for the outside.

I’ve actually made this cake twice recently! Once for my little one’s 3rd birthday (cue all the pink ruffles) and once for my sweet sister-in-law’s gender reveal cake (cue all the sprinkles)! They actually just welcomed their beautiful little girl at the end of April. She is perfect, and I just cannot wait to meet her. Welcome to the world, sweet girl!

Ingredients

  • 4 tablespoons butter softened
  • 12 cup strawberries pureed
  • 8 cups powdered sugar

Directions

  1. Prepare strawberries by washing, trimming, and pureeing in blender.
  2. In large mixing bowl, beat soften butter until smooth.
  3. Alternate mixing in powdered sugar and strawberries until all ingredients are combined and icing is the desired consistency.

Ingredients

  • 1 white cake mix
  • 1 cup strawberries pureed
  • 1 package strawberry Jello 3oz
  • 4 eggs separated
  • 12 cup oil
  • 14 cup milk

Directions

  1. Preheat oven to 350 degrees & prepare pans by greasing, lining with parchment, and lightly flouring.
  2. Prepare strawberries by washing, trimming, and pureeing in blender.
  3. In a large mixing bowl, whisk together the cake mix and strawberry jello. Add in egg yolks, oil, milk, and pureed strawberries and stir until combined.
  4. In a separate mixing bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the cake batter.
  6. Pour the batter into your prepared pans and bake at 350 degrees for the indicated bake time on the mix or until a toothpick inserted near the center comes out clean.
  7. Let cakes cool in pan on wire rack for 10 minutes. Remove from pan and let cool completely.
  8. Frost with Strawberry Buttercream Icing & enjoy!
