Easy Meals for the New Year — Slow Cooker Mexican Stuffed Peppers

We’re 10 days into this challenge and only just getting started, but I feel as though we’ve already shared SO many recipes with you. Any favorites yet?

Today’s recipe might just fall into the “favorites” category for you. Slow Cooker Mexican Stuffed Peppers from The Slow Cooking Housewife requires minimal prep — just mixing together a few items and 5-6 hours of hands-off time in the slow cooker. Have we mentioned how much we love one pot style meals?

This recipe is filling, but very light and healthy. I didn’t pair this meal with any sides as it is a great stand-alone main dish. If you wanted to add a side, a bowl of mixed fruit or a green salad would be the perfect addition. You could even throw in some chips and guacamole if you’re feeding a crowd!

Plan to Eat Tip: Shopping List

Your Shopping List will populate with every ingredient listed in your planned recipes.  Before heading to the store, we encourage you to “shop” in your kitchen to remove items that you already have. This will help you stretch your food budget by not coming home with ingredients that you already own. The video on this page will show you what this process looks like.

Some Plan to Eat users find it helpful to take this a step further by moving these items to a store that they create called “Kitchen Staples”, or “In the Kitchen”, or “Stuff I Already Have” (this article will show you how to customize the Stores on your list). They will then move flour, water, salt, and other ordinary items over to that store. Those items will automatically be moved to that store the next time they make their list, which helps to get those ordinary items out of the way quickly.

Make 2018 the year that meal planning becomes a habit.
