I wrote an article for a local food magazine, Edible Wasatch, about summer popsicles. As it turns out, the Frog Egg Popsicle recipe makes a darn good Frog Egg Pudding too!It took a bit of fiddling to work out a recipe that looked like jiggly frog eggs, but tasted like a dessert. I was inspired by those yummy kombucha drinks you can buy with floating, gelatinous chia seeds. This totally makes me want to throw a frog-themed birthday party. Anyone have any amphibian loving kids? My son totally got a kick out of this. The recipe is super simple:
- 2 cups pear juice
- 2 cups spinach
- 3 Tbsp honey
- 1⁄4 cup chia seeds
- In a blender, combine pear juice, spinach and honey.
- Stir in chia seeds.
I told you it was simple 🙂
My mind is already turning with the possibilities for other frog or pond-themed foods: lily pads? fishies? flies? Help me come up with some ideas!!
