As I flip through Jamie’s cookbook, there are some recipes that I look at with real apprehension. This is another one. I have never cooked Chow Mein. I have never eaten Chow Mein. I had serious reservations about whether or not my kids would eat it. I hate it when I work to cook dinner and the first words out of their mouths is “Yuck! I don’t like that!” This is before tasting it. (I trust I am not the only one who has experienced this joy.) All my reservations were unmerited with this recipe. They were begging for more. We did not have a drop left. It was really yummy! Even my 3 year old ate it up.

Ingredients

  • fresh ginger
  • 2 cloves garlic
  • 1/2 red chile
  • boneless, skinless chicken breast
  • sea salt
  • freshly ground black pepper
  • scallions
  • bunch fresh cilantro
  • bok choy
  • 4 oz chow mein noodles
  • peanut oil
  • 1 teaspoon cornstarch
  • 1 8 oz can water chestnuts
  • 3 tablespoons soy sauce
  • lime

It tasted very fresh. We will most definitely make this again. I might make a couple changes. We didn’t particularly like the bok choy. It didn’t seem to help the flavor. I think I might also leave out the water chestnuts. We didn’t dislike them, but we don’t love them either. Like the bok choy, to me they seemed like more of a distraction from the flavor than an enhancement.
