Salmon Baked in a Foil Parcel with Green Beans and Pesto

Our family is cooking our way through Jamie Oliver’s cookbook, Jamie’s Food Revolution.  Tonight we had:

I am not usually a big fan of fish, but this was really good!  It went together very quickly and turned out just lovely.  My only complaint is again that Jamie’s cooking times seem way too short. Is anyone else finding that?  I did use much bigger pieces of salmon than he has in this recipe.  Even with that, I had to cook the salmon for 45 minutes to get it fully done. His 15 minutes seems way off.

I served it with brown rice and a salad with a jam jar dressing. I am loving the jam jar dressings! It makes eating salad so much easier.  All Jamie’s dressing recipes are on page 107 of his book. Check them out!
