Copycat Amy’s Mexican Tamale Pies

1 can (15oz) diced tomatoes
1 small zucchini cut into tiny pieces optional
1 can (15oz) corn drained or 1 3/4 cup fresh or frozen
1 12 tsp chili powder
12 tsp cumin
1 tsp each: onion and garlic powder
12 tsp salt
for the topping: 1 cup cornmeal 1/2 tsp salt, 2 2/3 cups water, and optional 2 tsp oil. Or you could probably just use instant polen
