To help ease the craziness in the kitchen, Plan to Eat is hosting One Pot April. Throughout the month of April, Plan to Eat will be sharing 20 recipes from a variety of cookbooks and bloggers that are super-easy to make using a single pot or sheet pan. Throw all your ingredients into one pan, one pot, or in the oven and you’re done. This means less dishes, less time coordinating sides, and more quality time with your family. Imagine not having the stress over dinner, but still able to eat great home-cooked meals, and have less cleanup each night of the week. Here’s how it works:

The Menu

onepotpaleo3 of the 5 recipes in the first week’s menu comes from Jenny Castaneda’s fantastic book One-Pot Paleo. This book captures everything we wanted in One Pot April: healthy and delicious whole food recipes that only require one pot, pan, or bowl! Jenny’s recipes are specifically designed as complete meals made up of protein, vegetables, and just the right amount of carbohydrates — all in one pot. One-Pot Paleo contains over 100 easy, globally-inspired recipes ranging from Filipino Chicken BBQ to Japanese Hot Pot (pictured below… mmm…). If you are into Paleo, or if you just like really good really healthy food, you need this book on your shelf and we have one to give away!… But we’ll get to that in a minute.

Skirt-Steak-Fajitas

Truly amazing. You’ll know you’re in for a treat as soon as the beef hits the hot cast-iron pan because your entire house will smell so good. And it’s simple too. Mix a marinade and let the beef bathe in it for one hour, sear it for 5 minutes in a hot pan, sauté the vegetables, and serve.

Chicken Pesto Zucchini

We’re big fans of spiralized veggies. A lot of people think of them as mere substitutes for traditional noodles, but this dish is all about giving them their own deserved place at the table. The pesto and sun-dried tomatoes sends this dish over the top.

This is a classic example of a meal in a bowl: noodles, beef, veggies, served in a sweet broth. It’s truly delicious and filling.

Slow Cooker Tex Mex Quinoa

Such an easy recipe! Place the ingredients in the slow cooker and let it do it’s thing. Top it with fresh avocado and cilantro and dinner is served.

Get out your skillet. This recipe really does only take 20 minutes to make and is done entirely in one pot. When the evening has gotten away from you and you need dinner fast, this is a great go-to meal.
