This is the final day for this weeks meal plan in our Jamie’s Food Revolution cook-along.  Today for breakfast we made:

One-Cup Pancakes, Tropical Yogurt and Mango, pg. 303

We really loved the combination of flavors in this recipe!  The pancakes were very quick to prepare using the self-rising flour. I have never used self-rising flour before and I think I prefer all purpose or whole wheat flour so I have more control over the leavening and salt.  The yogurt was really good and a nice way to top the pancakes. We used strawberries rather than mango and did put a little maple syrup on top.  I like to serve pancakes with eggs and sausage to balance out the sugary pancakes with some protein.  This didn’t just WOW us, but it was a very good, simple recipe.
