It's another item on the week 1 menu for Make Ahead Meal Plan Challenge.

i thought I scaled the recipe to make 16 servings instead of 32. But the amounts are the same on the original 32 serving as they are on my scaled 32 servings. I must have missed a step.

I would omit the oregano next time. Not crazy about oregano in this one. Otherwise, it's delish!

Has anyone thawed a batched and cooked it on low for an hour in the crockpot?

I have some bean-a-phobes at my house so I subbed diced carrots and celery and sauteed them with the beef. it worked out really well. Everyone liked it, including my toddler. Next time I might try diced pumpkin or acorn squash.

To answer above (CristiP), it appears the original should say serves 16. So I'd just used the scaled tab, and follow that. (But you've probably already arrived at the same conclusion.) :)
