Mexican Coleslaw (or Cortido Salad)

Ingredients

1 small
head of green cabbage
sliced thinly and chopped into bite-size pieces

1⁄3 cup minced
cilantro

green onion
diced (green + white parts)

1 medium
carrot
diced small

1-2 tablespoons
apple cider vinegar
or to taste

1 pinch
cayenne or chipotle powder

salt
to taste

1⁄2 teaspoons
dried Mexican oregano
crumbled
Directions
Combine all ingredients in a medium bowl and toss with your hands. Taste, and adjust seasoning as necessary. Let sit 15 minutes before serving to allow flavors to meld.
