Organic Pumpkin Puree
(1.5 cups)

Puffed Quinoa Cereal
or cooked quinoa

1⁄4 cup
Raw Pumpkin Seeds

1⁄2 cup
Raisins

1.5 cups
oat flour
-
1 tsp
baking powder
-
1 tsp
baking soda
-
1 tsp
cinnamon
-
1⁄2 tsp
ground ginger

1⁄4 tsp
ground nutmeg

1⁄2 tsp
salt
Directions
Preheat oven to 350F
In a blender, mix all liquid ingredients.
In a separate bowl, mix the dry ingredients. Gently pour wet into dry & fold together without over mixing.
Fill muffin cups and top with extra pumpkin seeds
Place in oven & Bake for 20 - 25 min.
