Thai Salad Zoodle Bowl

Directions
Prepare the vegetable noodles by spiralizing zucchini, cucumber and carrot.
Add the avocado, onions, chopped cilantro, and mint to the bowl.
To make the tamari peanut sauce, whisk together all of the sauce ingredients in a small bowl until the sauce is smooth and creamy.
Drizzle in the dressing to coat the portioned amount.
Serve with a wedge of lime and a sprinkle of extra cilantro and mint.
You may also want to add sesame seeds or lightly toasted cashews or almonds.
