Red Lentil and Kale Lemon Soup

1 tablespoon organic virgin coconut oil
12 cup onion small dice
12 cup carrots small dice
3 teaspoon Indian red curry powder or red curry paste
12 cup celery small dice
1 large clove garlic minced
12 teaspoon fresh ginger or 2 drops doTERRA ginger essential oil minced
1 cup dry red lentils rinsed under cold water
1 cup diced tomatoes
6 cups water or broth
2 cubes bouillon of choice
12 cup rice of choice
12 cup kale sliced fine and spine removed
12 juice of a lemon
For an extra lemony flavor try adding:
1 table spoon of olive oil with 3 drops of lemon essential oil massaged into the Kale before adding into the soup pot.
