Arugula Walnut Salad w/Orange Vinaigrette

Ingredients

  • 6 large handfuls Arugula
  • 2 handfuls radicchio
  • 12 cup dried cranberries
  • 12 cup walnuts toasted & chopped
  • 1 Granny Smith Apple peeled and chopped into large chunks
  • Sweet Orange Dressing:
  • 3 Tbsp apple cider vinegar
  • 2 12 tsp Dijon mustard
  • 2 Tbsp Maple Syrup
  • 1 tsp Orange Zest
  • 1 juice from 1 orange
  • salt and pepper to taste
  • 23 cup olive oil whisked in last and slowly to emulsify

I HATE to plan meals. I HATE to repeat the same stuff meal after meal. I LOVE to collect recipes, but then I lose them and get to the point where if I am going to throw something together that stinks, we may as well do take-out. However, I agree with your philosophy that what we feed our family MATTERS, so I think I have found my solution with your awesome site! I love that I can easily move a recipe to any day, just drag and drop. I also love the shopping list layout and really find the recipe key helpful. With PTE I have to do a little more work to create a meal plan but I am left knowing I'm going to cook something that I actually want. Most other sites that I have found give you a meal plan but don't allow you to edit it all. And if my week gets crazy I can move that Chicken Marsala to next Tuesday in one simple move.

Oh, Plan To Eat, where have you been my whole life? I have dreamed of you lo these many years but for naught! Thank you, thank you, thank you for this service (labor of love). I imported my favorite recipe, verified accuracy, scheduled it and put it on the shopping list in less than 5 minutes. And then, through teary eyes, I set to writing this thank you note (love letter). I've spent 20+ years trying to streamline this process - never finding the meal planning holy grail. While working 40-50 hours and commuting another 10, my "free" time has been for maintaining my family and home. You've given me back a good 2-3 hours a week.

I love it. I have done a couple of different meal planning subscription services, but this is so much better. I have to do a little more work, but get to customize what we eat and not just follow the recipes given to me (that my family didn't enjoy). Thanks for simplifying meal planning.
