Ingredients
10 | oz. | dried spaghetti (or angel hair pasta) |
1 | pound | extra large shrimp - peeled and deveined raw |
2 | Tbsp | green onion, sliced |
1 | Tbsp | olive oil |
1.5 | cups | summer vegetables (zucchini, mushrooms, asparagus, etc.) |
1⁄4 | cup | sun-dried tomatoes (drained and chopped) |
2 | cups | assorted color grape tomatoes, quartered (or sub 3-4 large chopped tomatoes) |
1⁄4 | cup | white wine |
1⁄4 | cup | veggie or chicken broth |
1⁄4 | cup | pitted kalamata olives, sliced |
salt & pepper | ||
1⁄2 | cup | crumbled feta or goat cheese |
1⁄4 | cup | fresh basil, chopped |
