Sweet Potato, Kale and White Bean Sausage Soup

Directions
1. Heat olive oil in a large soup pot.
2. Add onion, carrots and celery and sautee until starting to turn translucent.
3. Stir in garlic. Add sweet potato, white beans, chicken sausage and thyme. Stir to combine.
4. Top with broth and cover. Bring to a rolling boil. Reduce to a simmer. Let simmer for 30-40 minutes until vegetables are cooked. Add more broth as desired.
5. Stir in kale and lemon juice. Season and serve.
