1. Preheat oven to 350.
2. In a large bowl, whisk oats, flour, baking soda, baking powder, cinnamon, sea salt and coconut sugar.
3. In a separate bowl, whisk peanut butter, honey, eggs, and orange zest if using.
4. Mix dry into wet until a thick batter forms. Stir in seeds and fruit.
5. Grease an 8x8" bakig dish. Pour batter in and spread evenly.
6. Bake in oven 25-30 minutes until toothpick inserted into center comes out clean. Let cool before slicing and serving.
