600 ml Chicken stock Good quality cubes or shopped bought
1 Pinch Sea salt To taste

1 Bunch Fresh mint Finely chopped
1 Bunch Fresh parsley Finely chopped
1 Bunch Fresh coriander Finely chopped
75 g Dried apricots Chopped
25 g Flaked almonds To finish
Steamed couscous To serve
