mix shredded chicken (deboned & shredded/cubed, skin off), cucumbers (halved lengthwise and sliced into 1/4 inch thick slices), tomatoes (sliced or chopped), onion (thinly sliced), avocado (peeled, pitted and diced) and chopped parsley in a large salad bowl.
drizzle with olive oil and lemon juice.
season with salt and pepper.
toss ingredients to mix all the flavors.
