Chicken Broccoli Rice Casserole

Ingredients

10 cups cooked rice (white or brown)
4 cups cooked chicken chopped (I bake mine in the oven like this .)
4 cups chopped broccoli lightly steamed (can use frozen or fresh)
2 cans cream of mushroom soup (or 2 batches cream of mushroom soup )
2 cans cream of chicken soup (or 2 batches cream of chicken soup )
4 cups shredded cheddar cheese
salt and pepper to taste

Homemade cream of mushroom or chicken. 2 tablespoons butter 2 tablespoons flour Plus 1 cup milk and chicken bouillon

2 chicken breasts

1 cup chopped broccoli

use greek yogurt instead of the cream soups. add cornstarch as indicated below

Yogurt can be used to thicken sauces much like heavy cream. You will need to add some starch to keep it from curdling because yogurt lacks the fat of heavy cream. Whisk in 2 teaspoons of cornstarch or 1 tablespoon of flour for 1 cup of yogurt before adding it to hot liquids. Whisk as it simmers and thickens, and never let it boil.
