12 onion finely chopped (I used a yellow onion, red is okay too, if you like that flavor)
1 tablespoon dried parsley (dry is better than fresh because it's too wet)
2 cloves minced garlic
1 egg
1 teaspoon kosher salt
14 teaspoon black pepper
2 teaspoons ground cumin
1 teaspoon ground coriander
14 teaspoon cayenne pepper
1 lemon juice from - but a lemon nonetheless)
12-34 cup bread crumbs (I have gluten free crumbs made from a loaf of brown rice bread that I keep in the freezer)
2 tablespoons olive oil (for the bottom of your crock)
