Generic shredded cheddar just did not seem to have enough flavor.

5-23-2018 for family dinner...doubled recipe and used whole pound of bacon, cooked broccoli ends chopped up as bacon was browning. Kids were excited to see bacon in their Mac and cheese. Broccoli is a standard for our Mac and cheese.
