My kids loved this. Substituted eggplant for onion since kids hate onion and it was great.

it was quite soupy since all the veg release a ton of water. Not sure how it could possbily look like the photo. Perhaps seed the tomatoes first?

Tried second time in smaller dish... more like a pie, left out onions, cooked half time uncovered and way better. Less water, though still a lot, but more tender and better flavor.
