This is it! The very last recipe in our Easy Meals for the New Year Challenge: Sausage Lentil Soup from Simply Sunday’s Food Blog. This recipe is simple to make, however the flavors are anything but!

The recipe brings together italian sausage, lentils, kale, red wine vinegar (you don’t want to leave that out!) and a few other ingredients to make a light and comforting bowl of soup that is perfect for cold winter days. This recipe was a hit at our house and I’ve made it several times since we started planning for this challenge. It’s just as delicious when reheated, so make a little extra and have leftovers for lunches thru your week!

I paired this recipe with a loaf of sourdough bread and grapes!
