I peeled the sweet potato before slicing it with my mandoline. It just made more sense to me to do it that way. The tastes here are delicious!

I thought I would use the French fries insert on my mandolin and it made it more like shoe string fries. But since my dinner had this as a side dish it was very good.

this was very good. However, I paired it with the bacon/power greens pasta recipe and between the amount of butter for this recipe and bacon for the other, there is NO way it could be that healthy. Tasted good though. But I won't pair it together again though.

I went with extra-virgin coconut oil instead of butter to make it vegan. I love the simplicity and yet sooo delicious!
