  • 15 ounces chickpeas drained and rinsed
  • 2 tbsp pure maple syrup
  • 1 tbsp agave nectar
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 2 tbsp raw sugar

Set chickpeas in an even layer on a clean kitchen towel and allow to air dry, about 15 minutes. Meanwhile, preheat toaster oven to 350 F (conventional oven 325 F). Grease cookie sheet or tray, or line with parchment paper (preferred method) and transfer chickpeas, in a single layer. Lightly spray with cooking spray and bake 30 to 35 minutes, until crunchy. Meanwhile, whisk all remaining ingredients except raw sugar together in a medium mixing bowl and set aside. Transfer sugar to a small food processor or grinder and process until smooth, fine and powdery -- a cross between the consistency of white refined sugar and confectioners (powdered) sugar. Dump the chickpeas into the syrup mixture and stir to coat. Once evenly coated, sprinkle sugar over chickpeas, stirring gently, until all chickpeas have a nice sugar coating. Return to baking try and bake for another 5 to 15 minutes. Until there is a crystalized glaze and the chickpeas are completely crunchy; being careful not to burn.

I just finished planning a week of camping meals. Wow! It was so much easier than years past when I've made multiple lists, organized them and then reorganized them. I printed one list for shopping before we leave and one list for shopping while we're there. Now I can relax and enjoy our vacation!

I've been using this for awhile now and I absolutely LOVE it! Makes everything so much easier. We save money because we plan out our meals and have an easy way to keep tabs on what we already have in stock vs. what we need to buy, we're *still* losing weight because we plan healthy and nutritious meals, which saves time by the planning of course but THEN we have built in lunches made already for the next day with the leftovers! I HATE to plan meals. I HATE to repeat the same stuff meal after meal. I LOVE to collect recipes, but then I lose them and get to the point where if I am going to throw something together that stinks, we may as well do take-out. However, I agree with your philosophy that what we feed our family MATTERS, so I think I have found my solution with your awesome site! I can't wait to get ORGANIZED and start consistently putting meals on the table that weren't "phoned in" (literally and figuratively!!). THANKS SO MUCH!!!
