Arugula Walnut Salad w/Orange Vinaigrette shared by

Ingredients

  • 6 large handfuls Arugula
  • 2 handfuls radicchio
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts toasted & chopped
  • 1 Granny Smith Apple peeled and chopped into large chunks
  • Sweet Orange Dressing:
  • 3 Tbsp apple cider vinegar
  • 2 1/2 tsp Dijon mustard
  • 2 Tbsp Maple Syrup
  • 1 tsp Orange Zest
  • 1 juice from 1 orange
  • salt and pepper to taste
  • 2/3 cup olive oil whisked in last and slowly to emulsify

Directions

Directions

Place all salad ingredients in a large bowl, and toss with just enough vinaigrette to barely coat the salad. Go easy and light on the dressing so that you don't overpower the rest of the flavors of the salad.
