Apricot-Glazed Chicken with Quinoa Dressing

12 cup apricot preserves
1 tablespoon grainy Dijon mustard
12 organic chicken pieces any cut, bone-in, skin-on
34 teaspoon sea salt
14 teaspoon black pepper
2 cups chicken stock
1 medium onion, chopped
2 large ribs celery, chopped
2 cloves of garlic, minced
1 cup uncooked quinoa, rinsed
13 cup dried apricots, chopped
14 cup almond slivers toasted

Comments & Personal Notes

This recipe overcooks the celery and onions but cooking it with quinoa infuses their flavor into the grain. Not sure how to avoid overcooking

I need to cook the quinoa a little longer, it was still fairly crunchy.

This was fairly good. I halved the recipe. Everything did fine except it was a tad over cooked with the same time frame. So next time I will not cook it as long. I like to soak my Quinoa overnight with whey or lemon juice to break down the acids to make it easier to digest. So I did not cook it in chicken broth, but instead used a little bit to moisten it all up once I put the vegetables in it. I cooked the Celery just before I put the garlic in so it didn't get over cooked. I would cook it again :)

The quinoa dressing was amazing. I did need to add additional water (about 1/4 cup) to fully cook the quinoa. I halved the dried apricots.The celery was slightly overcooked, so next time I'll add it about half way through the onion caramelizing.

We weren't too crazy about this - I think I will try using rice instead of quinoa next time.

chicken overcooked. lessen the time. skip the quinoa. too much apricot flavor all the way around. won't do it again.
