1 (15 oz) can black beans drained and rinsed
1 bell pepper (any color) chopped, chopped
1 cup mushrooms chopped
2 cups spinach
2 tsp cumin
1 tsp chili powder
1 can green enchilada sauce
6 corn tortillas or whole grain
1 jar salsa will not use all of it
13 cup grated sharp cheddar cheese
14 cup fresh cilantro chopped
Hot sauce to taste optional
