6-7 cups cooked quinoa, wild rice or millet
4 tbsp olive oil
2 tbsp wheat free tamari
12 whole diced red onion (1cm dice)
12 cup diced tomatoes
1 large sweet potato diced
2 tsp DRIED basil
4 tbsp FRESH cilantro sprinkled
4 tbsp raw organic sunflower seeds
14 cup soaked almonds
1 whole avocado sliced
Topped with about 3-4 sunflower sprouts on each bowl

Are you supposed to parboil the sweet potato first?

I diced it and after about 20 minutes frying it's still a bit hard in the middle.

It depends on how thick your slices are - so it will take longer if they are in bigger chunks :)

OK. I did about 1cm cubes - probably a bit too thick for just frying/grilling!

We also didn't know how to soak almonds, and only soaked them for about an hour. Looks like this is the proper way to do it - http://www.naturallyknockedup.com/almonds-how-to-soak/ (for 24 hours)
