Butternut Squash Apple Soup shared by

Serves

Ingredients

  • 2 tablespoons coconut oil
  • 1 medium onion diced
  • 1 medium butternut squash peeled, seeded and diced into 2 inch cubes
  • 2 apples peeled, cored and sliced
  • 1 sweet potato
  • 4-6 carrots or parsnips
  • 1 teaspoon cinnamon
  • 4 cups organic stock
  • 2 garlic cloves
  • 1 tsp turmeric
  • 2 tsp curry powder
  • 1/2 cup coconut milk
  • hemp & pumpkin seeds

Directions

Directions

In a large pot warm oil
Carmelize onion, garlic sautéing 10-15 minutes until golden brown
Add squash cubes, apple slices and cinnamon and cook for 10 minutes
Pour stock into pot and bring mixture to a boil
Reduce heat and simmer for 30 minutes
In a Vitamix, puree soup in very small batches (for safety)
Serve hot

I just wanted to say that I am so happy that you offer a thirty-day free trial even though the product seems very reasonably priced to begin with. It's just one more thing for a busy mom to remember to cancel a membership that I'm not using so I likely wouldn't have tried this without the free trial option. And I'm so glad I did! I have accidentally turned my children into processed/fast food junkies because we're always so busy that I got into the habit of just grabbing something on the run or, at most, heating something up at home. I have been using plan to eat for almost a month now and my children (unsurprisingly) have not been overly impressed with my efforts at cooking real food and eating at home. But last night, finally, my older son said, "Wow Mom, that was really good. You should make that again!" Music, symphony really, to my ears! Not to mention the stress-reduction of knowing what's for dinner that night and having the ingredients in the house, ready to go, and not spoiled already!!

oh man!! Bless you!!! I am so relieved! After working with Pepperplate for the past month, and finally getting to the point of utter, red hot, pull my hair out frustration today, I found you!! Now, YOU have obviously created a menu plan, because the app shows it! I am currently in the process of moving ALL 165 of my recipes over to your app. (one by one I might add, because PP has no way of exporting recipes!), and after the trial, I will be signing up for LIFE!! LOL! Thank you so much for this incredibly intuitive, logical, complete app!
