Easy Chickpeasy Crockpot Stew {Vegan} shared by

Ingredients

  • 2 cups filtered water
  • 4 cups organic veggie broth
  • 1 jar stewed tomoatoes (2 cups)
  • 2 zucchinis chopped
  • 1 block tempeh crumbled optional
  • 1 head broccoli
  • 3 carrot sliced
  • 2 sweet potato peeled and diced
  • 1 yellow onion
  • 1 cup green lentils
  • 1.5 cups chickpeas cooked or 1 BPA free can
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 2 cloves garlic minced
  • 1 teaspoon oregeno
  • 2 bay leaves
  • Sea salt to taste
  • 1 tsp thyme

Directions

Directions

Add all ingredients to crockpot and cook on high for 3 hrs or low for 6-8 (until sweet potatoes are soft)
You can also put all dry ingredients in freezer bag and add liquids when putting in crockpot

As result of using Plan to Eat, I've started planning meals a month at a time, which allows me to do one major grocery shopping trip a month and then a brief 5-10 minutes weekly to pick up produce and dairy. There is now zero stress when it comes to what I am feeding my family, grocery shopping and meal prep. I know exactly what we're going to eat and when I need to prepare what item. I just recently found PlantoEat and I have to say... I LOVE IT! I tried BigOven, which seems to be very similar in appearance. When I first looked at it I thought it WAS BigOven, but I could not have been more wrong! Plan to Eat offers the ability to add snacks and unlimited amount of recipes.
