Baked Potato Soup - Crockpot Recipe

5 pounds russet potatoes washed and peeled. Diced into ½ inch cubes
1 small/medium yellow onion diced
5 cloves of garlic minced (if you use jarred, it's a 2½ teaspoon)
64 ounces (8 cups) chicken stock or broth
16 oz cream cheese softened
1 tablespoon seasoned salt
crumbled bacon optional topping
shredded cheese optional topping
green onion optional topping

Comments & Personal Notes

Good. Could have used more flavor. Adding in Green Onion, Bacon or sour cream would make it like a loaded baked potato. Have lots left over, put in freezer for another time.
