Car Hoppin' Chicken Strips

  • Shortening
  • 4 medium skinless, boneless chicken breast halves (about 1.25 pounds cut into strips
  • 1 cup bite size cheese crackers crushed
  • 1/4 cup fine dry bread crumbs
  • 1/2 cup buttermilk or milk
  • Honey Mustard and/or Ranch dressing for dipping


Turn on the oven to 400. Grease the baking pan with shortening.

Mix the crushed cheese crackers and the breadcrumbs in a shallow dish or pie plate. Put buttermilk in a medium bowl.

Dip each chicken breast in the buttermilk, coating completely. Roll each piece in the crumb mixture. Press crumbs onto chicken pieces. Place costed chicken pieces in greased baking pan.

Put baking pan in the oven. Bake for 15 to 20 minutes or until no pink is left in the center and the crumb mix is golden brown.

Serve chicken strips with honey mustard or ranch.

I've looked at other meal planning sites but most that I've seen have their own recipes and I really like to use my own. I love the fact that your site allows you to add recipes from anywhere and it's so quick and easy! Your site has everything that I could have wanted in a meal planning site. You really have thought of everything. I love that you can filter recipes, place recipes in queue for future meal planning and the drop and drag makes things so easy. The shopping list feature is amazing as well...I love that I always have my list with me on my Smartphone!

A few months ago I discovered Ziplist. I loved collecting recipes from the web and using the grocery list with the app to shop. However, I was surprised and frustrated that changing the size of recipes (even something as simple as doubling) really wasn't an option! I am very impressed with how easy Plan to Eat makes it to change the size of a recipe to any number of servings I want. Ziplist is free, but your service is well priced and more functional. It's also better looking! Thanks for a wonderful product.

I have been trying your site out for 5 minutes and I'm absolutely IN LOVE!!!! I'm a dietitian and love to use different recipes and plan our meals each week. Each week I'm searching different sources to find the recipes I want and making the meal plan/grocery list. Your site will keep it all in one place for me! I'm easily importing favorite recipes already! I've tried other websites that provide a weekly meal plan for you but never found that they quite fit what my family wanted/needed. Plan to Eat is perfect (sorry to say I didn't think of the idea myself or have the ability to create it)!
