Millet Artichoke Heart Risotto shared by

Source: Good - Clean Foods

Serves

Ingredients

  • 3 tablespoons coconut oil or olive oil
  • 1/2 red onion finely chopped
  • 1 cup coarsely chopped fresh mushrooms (any kind)
  • 1 cup millet
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups artichoke hearts make sure they’re sugar and additive free if you’re buying them in a can or jar
  • Sea salt and fresh pepper
  • 4-6 cups french onion soup or organic vegetable broth

Directions

Directions

In a large pot over medium-high heat, add the rest of the oil, shallots and mushrooms, and cook, stirring frequently until softened (about 5 minutes).
Lower heat to medium and start to add the stock 1/2 cup at a time, stirring after each addition, every few minutes. When the stock has been almost
completely absorbed after each addition, keep adding more, so the mixture isn’t quite soup but stays very moist.
Keep doing this until millet is tender and has at least doubled in size (about 20 minutes).
Add herbs and artichoke hearts at the last few minutes of cooking and taste for texture.
Season with salt and pepper and serve warm.
Variation: Millet Risotto with Butternut Squash
Instead of the artichoke hearts, add 1 cup diced butternut squash (that’s been cooked in oil until lightly browned — about
5 minutes — and add chopped shallots towards the end and sage for your herb.

Wow, that sounds like a great gift!

Love it so far...especially the automatic grocery list. No more little pieces of paper that I never remember to bring into the store! My kids are eating more nutritious meals because of you (me too)! Thanks.

Its like you took everything a person could want, and some things we didnt know we wanted and put it into the is site. I love how easy it is to import recipes and I am simply AMAZED at how your system recognizes and understands the ingredients to put together a complete and easy to use shopping list. I have never seen anything like it and I have been on a lot of recipe sites!

I just used the Save Recipe (PTE) pinmarklet tool thingie on a blog recipe and I am blown away!!! I've never really used it before because I always just search for recipes in the P2E site because it was 'easier'. Thank you, thank you for such a neat tool! It slurped up the ingredients, the directions and even made it easy for me to add the picture! You guys have a fabulous service and it makes my life so much easier!

I have a 9 month old girl and a 9 year old boy and have been a stay at home mother for a year now. However, I am now looking for work and realizing how important meal-planning will be when I go back to work, I have tried quite many different meal-planning websites and apps. None is as good as yours and I'm SO pleased I've finally found something which is going to make my life a lot easier. I absolutely refuse to feed my family processed fast/convenience food and insist in cooking proper food from scratch, so your planning is vital. Your website will play a key part in providing us all with a healthy diet. Big, big thank you!

I just spent some time entering recipes and trying out your software and I am in love!! Thank you! I looked for something like this for years, and even bought some software about 10 years ago that was awful. You are an answer to a prayer, freeing up my menu planning time so I can do other things. Thank you so much!
