Millet Artichoke Heart Risotto

Source: Good - Clean Foods

  • 3 tablespoons coconut oil or olive oil
  • 12 red onion finely chopped
  • 1 cup coarsely chopped fresh mushrooms (any kind)
  • 1 cup millet
  • 12 teaspoon dried oregano
  • 12 teaspoon dried thyme
  • 1 12 cups artichoke hearts make sure they’re sugar and additive free if you’re buying them in a can or jar
  • Sea salt and fresh pepper
  • 6 cups french onion soup or organic vegetable broth

In a large pot over medium-high heat, add the rest of the oil, shallots and mushrooms, and cook, stirring frequently until softened (about 5 minutes).

Lower heat to medium and start to add the stock 1/2 cup at a time, stirring after each addition, every few minutes. When the stock has been almost

completely absorbed after each addition, keep adding more, so the mixture isn’t quite soup but stays very moist.

Keep doing this until millet is tender and has at least doubled in size (about 20 minutes).

Add herbs and artichoke hearts at the last few minutes of cooking and taste for texture.

Season with salt and pepper and serve warm.

Variation: Millet Risotto with Butternut Squash

Instead of the artichoke hearts, add 1 cup diced butternut squash (that’s been cooked in oil until lightly browned — about

5 minutes — and add chopped shallots towards the end and sage for your herb.

Course: Side Dishes

Oh, Plan To Eat, where have you been my whole life? I have dreamed of you lo these many years but for naught! Thank you, thank you, thank you for this service (labor of love). I imported my favorite recipe, verified accuracy, scheduled it and put it on the shopping list in less than 5 minutes. And then, through teary eyes, I set to writing this thank you note (love letter). I've spent 20+ years trying to streamline this process - never finding the meal planning holy grail. While working 40-50 hours and commuting another 10, my "free" time has been for maintaining my family and home. You've given me back a good 2-3 hours a week.

(Plan to Eat) saved me at least an hour of planning meals, making the shopping list and inputting it into the previous app I was using. I love that I can plan my meals for the week then it pulls the shopping list for me. I really like that I can go to the staples list and add what I need from there to my shopping list. I also like that I can add my own specific needs to the staples list or my shopping list for the week.

I just wanted to wish you a wonderful Christmas Holiday and to say thank you for all the hard work (and love) that went into Plan to Eat this year. It seems like every time I use the program it has some new and improved feature. I love the way it is getting better and better all the time. It has made menu planning and recipe management a breeze for me - I couldn't live without it now.
