Taco Salad w/ Spicy Cilantro Dressing shared by

Ingredients

  • Leftover Lentil Taco Meat
  • 1 Tbsp. Coconut Oil
  • 1/2 tsp salt
  • crack of pepper
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp garlic powder
  • DRESSING:
  • 3/4 cup Veganaise (vegan mayo)
  • 1 clove garlic
  • 7 tomatillos or 2 tbsp spicy tomato salsa
  • 1 cup cilantro (nice big handful)
  • juice of 1/2 lemon
  • 1/2 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp dried dill
  • 1/4 tsp cayenne pepper

Directions

Directions

In a large skillet, heat the oil over medium heat. Add the lentil taco meat to warm. Remove from heat and place over crushed tortilla chips on plates. Top with romaine lettuce, sliced tomatoes, salsa & Dressing

Dressing: Blend in a blender until smooth. Taste and add any additional salt and pepper if needed.
