Overnight Cookie Dough Oats

I might be slightly obsessed with oatmeal. Okay, so maybe “slightly” isn’t the right word. TOTALLY obsessed with oatmeal is more like it. I have about 40 variations of different oatmeal recipes in my “favorites” folder – soooooooooooooooooooo, you’ve been fairly warned in advance. Stacy is gonna post oatmeal recipes.

What do I love about oats? Well, they’re so stinkin’ easy. You can boil them, bake them, toast them, or just cover them with liquid and stick them in the fridge – or eat them raw out of the jar. I mean, if you’re into that kind of stuff, which I’m not. *Cough*

Also, oats are cheap – plain and simple. If your budget dictates that you need to keep your grocery budget as low as possible, then oats and beans are a great way to do so! I always purchase my oats in bulk – usually 10 pounds at a time, but sometimes 25 if I can find them.

Where do I buy oats? Well, you can purchase them at big-box stores like Sam’s and Costco. Or you can purchase in bulk from your local Amish store – which is one of my favorite ways. The last little bit, I’ve been ordering organic oats from Tropical Traditions – but the cheapest way to go is usually at a bulk-buying store or Amish store.

When I get oats in bulk, I store them in large airtight containers in my basement – that way I don’t worry about them going rancid – because rancid food will burn your nose hairs out if you take a big whiff. However, if you don’t go through oats as fast as we do, you might consider storing them in the freezer if you buy large quantities.

Now, one of my favorite ways to prepared oatmeal is my favorite recipe: Baked Oatmeal. But, I’ve also become quite smitten with overnight oats. The gist of overnight oats is, you mix all your stuff together at night and put the lid on (I use a mason jar because I’m also obsessed with those). Overnight, the oats absorb the liquid and turn into a creamy goodness that is happiness in your mouth.

You can eat the oats cold right out of the jar – which is great in the summer time for a cool breakfast. Or you can heat them up and eat them hot – which is a nice winter delight.

The recipe below is a favorite of my children – but who doesn’t like cookie dough? And if you don’t, don’t tell me. No worries about this cookie dough because there is NO raw egg in it…I’m not cool with eating raw egg. I know it’s okay for me, but it just gives me the heebie jeebies.

Overnight Cookie Dough Oats

Serves: 1

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup milk (almond milk is our preference)
  • 1/4 cup Greek yogurt
  • 2 teaspoons Truvia or stevia to taste, (I use homemade)
  • 1 tablespoons chia seeds

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon butter extract (optional but really helps with the cookie flavor)
  • Pinch salt
  • 1 tablespoon mini chocolate chips

Directions

  1. Combine all ingredients in a pint jar with a tight fitting lid.
  2. Shake well to combine.
  3. Refrigerate overnight.
  4. Eat cold or heat in a pan on the stove.
